Aegisub styles are managed through the Styles Manager window, which is accessed by selecting Subtitles → Styles Manager... from the application menu. STY files are saved automatically and are not accessed directly by the user.
The Windows version of Aegisub stores STY files in the following directory: [user]\AppData\Roaming\Aegisub\catalog\. The Mac version saves to this directory: [user]/Library/Application Support/Aegisub/catalog/.
